About seven years ago, Dave and I got our gun licenses. We went to the Hamilton Gun Club, which is, according to them, the oldest continuously operating trap shooting club in the world (!!) for skeet and trap shooting and Silverdale Gun Club for target shooting.
Since that first disastrous experience in my kitchen in Hamilton, I have done some research on making confections, gone to the OMSPA (Ontario Maple Syrup Producers Association) event in Peterborough, Ontario, gone to an equipment supplier's in Michigan (the family makes their own syrup and related products), acquired some recipes, detailed cookbooks, and a book on some of the relevant science on cooking with sugars, and feel somewhat more accomplished at cooking syrup.
Since we are in an area inundated with maple syrup producers, we thought we'd specialize in the confections, i.e. maple sugar candies and all related goodies. Before we moved here, while still in our house in Hamilton, I tried making maple syrup candies using a recipe I found on the internet. Dave was out teaching his judo class and I was standing at the stove, patiently watching the syrup.
